Canning question....


Question: I brined and hot packed some sliced jalapenos and wondering how long do i need to wait before they are good to eat?

I just finished doing blackberry Jam, its cooling now. I hope it sets up good....

They should be "good to eat" immediately. That said, if you'll wait a week or two, the different flavors should all have a chance to "meld" together real good.

Cool, I did the jalapenos were done two days ago. I'll try to wait to taste test. LOL!

Woods if you like jalapenos try making a quart of this sometime... quarter up some small green tomatoes and slice up some jalapenos. Use 1/3 jalapenos and 2/3 green tomatoes, cut up enough to fill a quart jar. Peel and chop up about 2 tablespoons of garlic. pack it all in a quart jar, add 1 teaspoon of salt. Boil enough cider vinegar to fill the jar and pour it in while still very hot. Put on lid, let cool and place in fridge for a week or two. You can also add cauliflower or carrots if you like but I like the green tomatoes best.
